Lemon Delicious Pudding
Our bold and tangy gluten free Lemon Delicious Pudding is an easy dessert to prepare. Refreshingly light, the lucious lemon tastes devine and is perfectly happy with some whipped cream or berries on top!

Ingredients
60g butter, softened
220g caster sugar
4 eggs, separated
2 tablespoons lemon zest, finely grated
60g Anything But Ordinary Plain Flour
½ teaspoon baking powder
240mls lemon juice, freshly squeezed
360mls milk
Method
Preheat oven to 160 degrees Celsius. Lightly grease a 6 cup capacity shallow baking dish.
Cream butter, sugar, egg yolks and lemon zest together with beaters until light and creamy. Add the sifted flour and baking powder, lemon juice and milk. Beat until smooth.
Beat the egg whites until soft peaks form then gradually and gently fold this into the mix with a spoon.
Pour into the prepared dish. Place into a larger baking tray then fill the baking tray with enough hot tap water to come halfway up the side of the dish. Bake in the oven for 35 minutes until set. Serve dusted with icing sugar and if desired some whipped cream.
