Honey Crackles

Nut Free ·  Vegan Option

Makes 12 or 24 mini

Ingredients

Dry Mix

150g Seedy Morning Muesli

40g / 1 cup gluten free corn flakes

Wet Mix

1 heaped tablespoon honey

OR for Vegan replace with 2 teaspoons each of rice malt syrup and coconut syrup

40g / 2 tablespoons butter

OR for Vegan use vegan butter

50g / 3 tablespoons coconut sugar

Method

Place 12 standard or 24 mini paper cup cake cases on a tray.

Place Seedy Morning Muesli and gluten free corn flakes in a mixing bowl and combine.

In a small heavy based saucepan put honey, butter and coconut sugar.

Heat on low and stir for a few minutes until the sugar melts, then let it come to a boil for about 3 minutes. It must stay over a low heat as it can burn if the heat is turned up. The longer it boils the crunchier the crackles become so if you prefer a looser chewy version, reduce the boiling time.

Using a spatula to scrape the base and sides of the saucepan clean, pour the hot mix into the dry ingredients. Stir really well to thoroughly coat everything.

Put spoonfuls into the paper cases and gently press the mixture together. Put in the fridge to set then store in an airtight container in the fridge. They keep for at least a week.
