Zucchini Fritter
Zucchini Fritter for lunch or afternoon tea
Ingredients
One zucchini grated and squished in a Tea towel
1 egg
1 cup Anything But Ordinary Plain Flour
1 teaspoon curry powder
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
juice of half a lemon
3/4 a teaspoon of baking powder
1.5 teaspoon of psyllium husk
1.5 cup any milk.
Method
Place all ingredients in a bowl and mix well to combine
Heat ghee or animal fat in a non stick frying pan on high heat
Add 1/4 cup of the mixture to the frying fan and flatten slightly
Cook for 3 minutes each side or until golden
Repeat with the remaining mixture
