Makes 10 batches of 2 large or 3 small serves

Ingredients

50g / ⅓ cup Macaroni Cheese Mix

250mls / 1 cup almond milk

1 red capsicum, seeded and chopped

25g / ½ cup nutritional yeast flakes

175g macaroni pasta

Method

While the macaroni is cooking in boiling water, put the Macaroni Cheese Mix, almond milk, capsicum and nutritional yeast flakes in a blender and puree til smooth.

Tip into a saucepan and over medium heat stir til hot and thickened.

Pour over cooked, drained macaroni and stir through to coat well.

Top with vegan parmesan cheese and cracked black pepper.
