gRumballs

Anything with a little bit of rum in at Christmas excites us just a little bit too much! If you aren’t a fan of rum you can easily swap it out for some apple juice, or rum flavouring if you’d prefer to skip the alcohol but keep the flavour.


Makes 32 x 30g balls

Ingredients

Dry Mix

1 x 270g packet Seriously Great Granola

80g / ½ cup + 2 teaspoons hemp seeds

100g / ⅔ cup powdered coconut sugar

80g / ½ cup lucuma powder

50g / ½ cup cocoa

2 tablespoons maca powder

1 tablespoon golden flaxmeal

¼ teaspoon mixed spice

¼ teaspoon cinnamon

⅛ teaspoon nutmeg

Wet Mix

100g / ⅔ cup raisins

80g / ½ cup sultanas

60g / ¼ cup acai puree (see note)

40ml / 2 tablespoons coconut oil, melted

60ml / ¼ cup rum (or juice of choice for non-alcoholic)

40g / ¼ cup Seriously Great Granola, crushed (extra)

25g / ¼ cup desiccated coconut

Method

In a high speed blender or food processor crush the extra Seriously Great Granola for rolling. Tip into a shallow bowl and set aside. Empty the packet of Seriously Great Granola and hemp seeds into the processor and blend until crumbly. Tip into a mixing bowl. Sieve into the same bowl the powdered coconut sugar, lucuma powder, cocoa, maca powder, flaxmeal, mixed spice, cinnamon and nutmeg. Stir to mix well.

In the blender or processor combine the raisins, sultanas, acai puree, melted coconut oil and rum. Blend until a puree. If using a food processor the dry ingredients can be tipped back in and pulsed to thoroughly mix, without losing the texture. Otherwise tip the puree into the dry ingredients and mix together using your hands if necessary.

Pinch off pieces of mix that weigh approx 30g each and roll into balls between the palms of your hands. Roll half the balls in crushed Seriously Great Granola and half in desiccated coconut.

Keep in a covered container in the fridge for a couple of weeks to enjoy as an energising, healthy, chocolate snack.

Note

1. Acai puree can be found in the frozen fruit section of supermarkets. It can be thawed before using but generally breaks down pretty quickly in the blender or processor.

2. Lucuma powder (natural sweetener and thickener), Maca powder (natural energiser) and Flaxmeal (fibre rich and a binder) can be purchased from supermarkets, health food outlets or online.
