Quick Green Pasta Sauce

Ingredients
50g / ½ cup Sauce Mix
250mls / 1 cup GF vegetable stock
30g / 1 tablespoon pesto
50g / 1 large handful baby spinach
Flesh of 2 small or 1 large very ripe avocado
175 g GF spaghetti
Optional
Broccolini or Extra Spinach leaves for serving
Method
While the spaghetti is cooking in boiling water, put the Sauce Mix, vegetable stock, pesto, spinach and avocado in a blender and puree til smooth. Tip into a saucepan and over medium heat stir til hot and thickened. Pour over cooked, drained spaghetti and top with grated parmesan cheese and cracked black pepper.
Serve with some steamed broccolini or extra spinach leaves
