White Christmas
White Christmas is such a festive favourite and our healthy Gluten Free White Christmas Slice recipe will add some colour to your Christmas dessert table.

Makes 18cm x 28cm / 7inch x 11 inch tray Approx 24-30 pieces
Ingredients
Dry Mix
150g / 1½ cups Seedy Morning Muesli
50g / ½ cup dessicated coconut
50g / ½ cup coconut milk powder (see note)
50g / ½ cup sweet rice flour (see note)
50g / ¼ heaped cup dried cranberries
50g / ¼ heaped cup dried pineapple, diced (see note)
50g / ¼ heaped cup dried apricot, diced
Wet Mix
150g / ½ cup (minus 2 teaspoons) rice malt syrup
150g / ½ cup + 1½ tablespoons coconut oil
Method
Line an 18cm x 28cm tray with baking paper.
Place Seedy Morning Muesli, coconut, coconut milk powder, sweet rice flour, cranberries, pineapple and apricot in a mixing bowl and combine.
In a small heavy based saucepan put rice malt syrup and coconut oil. Heat on low and stir until the oil melts, then let it come to a simmer for about 2 minutes. Using a spatula to scrape the base and sides of the saucepan clean, pour the hot mix into the dry ingredients. Stir really well to thoroughly coat everything.
Tip into the prepared tray, spread evenly, then press down hard to compact the mix. Put in the fridge to set, then cut into pieces and store in an airtight container in the fridge for up to a month. Best eaten when left to sit at room temp for 30 minutes.
Notes
Sweet rice flour, also called glutinous rice flour is available in the Asian section of some supermarkets otherwise from an Asian specialty store or health food outlet. It is gluten free.
Diced dried pineapple in packets and coconut milk powder can be found at supermarkets and health food stores.
