Granola Baked Sweet Potato

 

Enjoy this delicious, simple recipe, which will have you eating a whole plate of sweet potato.


Gluten Free

Serves 4

Ingredients

1kg orange sweet potato

2 tablespoons coconut oil

2 tablespoons olive oil

½ teaspoon salt

¼ teaspoon pepper

1 vegetable stock cube

160mls / ⅔ cup boiling water

70g / ½ cup Seriously Great Granola

2 teaspoons fresh thyme leaves

120g / ½ cup natural yoghurt of choice

Method

Preheat oven to 230 degrees Celsius.

Peel the sweet potato and cut into 2cm slices. Put the coconut oil in a baking tray and put in the oven for a minute to melt.

Remove from the oven and add the olive oil and sweet potato. Turn the sweet potato in the oils till covered over. Bake 15 minutes then turn each slice over and bake another 15 minutes.

Meanwhile dissolve the stock cube in boiling water and pour over the granola. Let it soak while the potato cooks. Remove the tray of sweet potato from the oven. Turn the slices over. Reserve the stock from the granola after draining.

Put some granola and thyme leaves on each slice. Pour the reserved stock over the sweet potato and bake another 15 minutes.

Serve hot with a dollop of yoghurt.
