Seriously Great Granola Salad

 

Our Granola Salad recipe, featuring our Seriously Great Granola, is simple and refreshing. A perfect lunch option that is filling and guilt-free, offering a delightful blend of flavours and textures.

Serves 2

Ingredients

1 Bravo apple

1 Beurre Bosc pear

1 stick celery

1 small carrot

2 cups / handfuls spinach leaves

95g / ⅔ cup Seriously Great Granola

Smokey baked tofu slices or bacon pieces (optional) 

60g / ¼ cup mayonnaise*

60g / ¼ cup natural yoghurt*

1 tablespoon lemon juice

1 tablespoon chopped fresh mint leaves

Snow pea sprouts

Method

Dice the apple with the skin on. Finely slice the pear with the skin on. Finely slice the celery and carrot. 

Combine the mayonnaise, yoghurt, lemon juice and mint. 

Place the spinach leaves on a platter. Arrange the apple, pear, celery, carrot and tofu or bacon on top. Scatter the Seriously Great Granola over and complete with drizzled dressing and snow pea sprouts. 

* Vegan/Dairy free mayonnaise and Coconut yoghurt can be substituted
