Ingredients
Smoothie Bowl
75g / ⅔ cup frozen pineapple
60g / ¼ cup frozen apple puree
75g / ½ large banana, peeled
75g / ½ avocado, peeled and stone removed (see note)
20mls / 1 tablespoon lemon juice
60g / ¼ cup vanilla yoghurt
1 medjool date, pit removed
25g / 1 tablespoon raw cashews
1 tablespoon hemp seeds
1 teaspoon honey
40g / 2 tablespoons passionfruit pulp

Passionfruit pulp
Method
Add the pineapple, apple puree, banana, avocado, lemon juice, yoghurt, date, cashews, hemp seeds and honey to a high speed blender and blend until super smooth and creamy.
Stir through the passionfruit pulp.
Serve the Pineapple Smoothie Bowl drizzled with extra passionfruit pulp, Seriously Great Granola and fruit.
Note
Use a very ripe avocado that is more yellow than green.
If you want to add your favourite vanilla protein powder to give it a boost, add another tablespoon of passionfruit. It can be kept covered in the fridge overnight, without losing it’s lovely thick texture.
