Makes 1 x 23-25cm / 9-10inch round
BASE
250g / 1⅔ cups Anything But Ordinary Plain Flour
100g / 1 heaped cup dessicated coconut
140g / 1 cup coconut sugar
225g butter, melted
CARAMEL FILLING
400g condensed milk
100g / ¼ cup golden syrup
45g butter, melted
TOPPING
300g dark chocolate
Method
Preheat oven to 150 degrees.
Line a 25cm/10inch x 30cm/12inch slice tray with baking paper, bringing it up the sides.
Base-
Mix the Anything But Ordinary Plain Flour, coconut and coconut sugar in a bowl. Pour in the melted butter and mix until combined. Press into the prepared tray and level with a flat sided jar or spatula.
Bake for 20-25 minutes.
Caramel Filling-
In a small bowl or jar combine the condensed milk, golden syrup and melted butter. Stir well. Pour over the partially baked base and spread evenly. Bake 25 minutes until golden. Leave to cool on a wire rack.
Topping-
Melt the dark chocolate and spread over the cold caramel filling to cover it. Leave to set. Cut before storing when chocolate is not too hard.
Will keep in a cool place in a covered container for 4-5 days or refrigerated for a week.
