Choc Chip Cookies
What is a lunchbox without a Choc Chip Cookie! These delicious, gluten-free treats will have your kids be the envy of the schoolyard. Always healthier than store-bought snacks, now parents, kids and tummies are all kept happy!

Ingredients
250g / 1⅔ cups Anything But Ordinary Plain Flour
1 teaspoon baking powder
120g / ½ cup soft butter
110g / ½ cup caster sugar
50g / ¼ cup light brown sugar
2 teaspoons vanilla extract
1 egg
100g / ½ cup dark choc chips
100g / ½ cup milk choc chips
Method
Preheat oven to 160 degrees Celsius.
Line three cookie trays with baking paper.
Sieve the Anything But Ordinary Plain Flour and baking powder together.
Beat the butter, sugars and vanilla together until light and creamy. Add the egg and beat til smooth. Add the sieved flour mix and beat on low until all the flour is incorporated. Add the choc chips and mix through.
The cookie dough will be soft. Roll into small balls (about 2 teaspoons of mix each). Place on prepared trays allowing room for spreading. Do not flatten the balls.
Bake for 15 minutes, turning the trays halfway through cooking. Cool on the trays. Store in an airtight tin or glass cookie jar for a few days.
Notes
You can freeze the dough if you don’t want to bake them all at once.
