Bircher Muesli

Our speedy no soak Gluten Free Bircher Muesli is ready in 15 minutes. How is that for breakfast on the go!

Makes 2 large or 3 small serves

Ingredients

100g / 1 cup Seedy Morning Muesli

2 tablespoons chia seeds

2 teaspoons cinnamon

120ml / ½ cup apple juice, unsweetened

40ml / 2 tablespoons date syrup

80g / 4 tablespoons yoghurt of choice (divided in half)

2 apples

2 Medjool dates, pits removed and chopped into small pieces

Method

In a bowl stir together the Seedy Morning Muesli, chia seeds and cinnamon.

Pour in the apple juice and date syrup and mix together, then add 2 tablespoons of yoghurt and stir again.

Peel both apples. Grate one apple over the bowl (until reaching the core) and mix in well. Core and dice the other apple and stir through. Let sit 15 minutes.

Stir the Bircher Muesli well, divide into serving bowls, dollop a tablespoon of yoghurt on each and scatter chopped dates on top.

The recipe is easily halved for 1 serve or any left over can be kept covered in the fridge to have the next morning.
