Green Smoothie Bowl

1 large or 2 small serves
Ingredients
75g / ½ avocado, peeled and stone removed
¼ teaspoon vanilla extract
25g / 1 tablespoon cashew butter
1 medjool date, pit removed
60g / ¼ cup coconut yoghurt
1 kiwi fruit, peeled
25g / handful baby spinach leaves
1 teaspoon matcha tea powder
½ teaspoon spirulina
1 tablespoon freshly squeezed lime juice
2 tablespoons apple juice
60g / ½ cup frozen mango

Pinch of spirulina and teaspoon maple syrup
25g / 1 tablespoon Seriously Great Granola
Blueberries and kiwi fruit
Coconut flakes
Method
Add the avocado, vanilla, cashew butter, date, yoghurt, kiwi fruit, spinach, matcha, spirulina, lime juice, apple juice and mango to a high-speed blender and blend until super smooth and creamy. If you wish to sweeten it more add a little maple syrup. Take a teaspoon of mix and stir in a pinch of spirulina and a little maple syrup to create a dark green syrup.
Serve the smoothie bowl with the green syrup swirled on top and place the blueberries, sliced kiwi fruit, some Seriously Great Granola and coconut flakes around the edge. Take a moment to appreciate the gorgeous green of this highly nutritious yet so very quick and simple smoothie bowl.
Note
If you want to add your favourite vanilla protein powder to give it a boost, add another tablespoon of apple juice. It can be kept covered in the fridge overnight, without losing its lovely thick texture.
