Tiramisu Chia Pudding
This Gluten Free Tiramisu Chia Pudding topped with our Seriously Great Granola could be your breakfast or dessert. Delicious layers of creamy coffee and vanilla flavoured chia pudding is topped with a divine layer of cream cheese.

Ingredients
Coffee Layer
150mls almond milk, unsweetened
100g pitted medjool dates
1 tablespoon dried goji berries
2 - 3 tablespoons brewed coffee (see note)
2 tablespoons rice malt syrup
2 teaspoons cacao powder
2 teaspoons maca powder
½ teaspoon coffee liqueur
25g black chia seeds
Vanilla Layer
150mls almond milk, unsweetened
200g coconut yoghurt
1 tablespoon rice malt syrup
1 tablespoon + 1 teaspoon vanilla extract
45g white chia seeds
Tiramisu Cream Layer
200g cream cheese
165g coconut cream (see note)
30g coconut yoghurt
30g banana
1 tablespoon + 1 teaspoon rice malt syrup
1¼ teaspoons vanilla extract

Method
To make the Coffee Layer place the almond milk, dates, goji berries, coffee, rice malt syrup, cacao, maca and liqueur in a high speed blender and blitz until smooth. Taste for preferred depth of coffee flavour and adjust if desired, remembering the other layers lessen the overall impact of the coffee and also add more sweetness. Add the chia seeds and stir through. Pour into a glass jar, cover with a lid and put into the fridge for 15 minutes, then stir well. Refrigerate covered at least a couple of hours or overnight to let the chia seeds swell and soften.
To make the Vanilla Layer blend the almond milk, coconut cream, yoghurt, rice malt syrup and vanilla until smooth. Add the chia seeds and stir through. Pour into a glass jar, cover with a lid and put into the fridge for 15 minutes, then stir well. Refrigerate as per the Coffee Layer.
To make the Tiramisu Cream Layer blend the cream cheese, coconut cream, yoghurt, banana, rice malt syrup and vanilla until super smooth and creamy. Pour into a jar, cover and refrigerate.
To assemble the Tiramisu Chia Pudding have ready 4 glasses or jars of minimum 300ml capacity. In each one place a quarter of the Coffee mix, followed by a quarter of the Vanilla mix and a quarter of the Tiramisu Cream. Some extra cacao powder can be sprinkled on top before piling on a quarter of the Seriously Great Granola. Serve immediately. If not using the lot at once, assemble just before eating. All the separate layers will keep covered in the fridge for 5 days.
Note
Begin with 2 tablespoons of brewed coffee and adjust according to taste as there are so many varieties of coffee with different levels of intensity. Decaf coffee can be used if preferred. Liqueur is optional but adds some depth.
Use 100% coconut cream, not a watered down variety.
